ammi’s blueberry pie

Ammi is the name we gave to my paternal grandmother and she was one heck of a cook. I’d like to think that a lot of my love for baking and creating a beautiful home come from her. She played a formative role in my life and I miss her dearly. A few of my favorite things that I inherited are her 1970’s mixer and a slew of index cards with her favorite recipes. Each one is written in careful cursive and her favorites are weathered with butter stains and bent edges. When I make this recipe (and others like Ammi’s Chocolate Chip Cookies), it feels like I’m 7 years old again and shes right beside me saying, “now honey, sneak a bite but don’t tell your parents.” A true hero.

INGREDIENTS

  • One pie shell

  • 4 cups of blueberries

  • 1/3 cup sugar

  • 1 tbsp corn starch

  • 2 squeezes of lemon

  • Whipped cream

INSTRUCTIONS

If you are using a pre-made pie crust, let it thaw for 10-20 minutes at room temperature, poke holes in it with a fork, and bake at 400 degrees for 10-12 minutes.

While this is baking, add 2 cups of blueberries, the sugar, corn starch, and lemon juice to a pot and cook over low-medium heat. Stir frequently. Cook until thick.

When the pie crust is done, remove from oven and add 2 cups of fresh berries. Pour the cooked ingredients over the berries and smooth the top.

Let sit in the fridge until set (1-2 hours).

Once set, top with whipped cream and enjoy!
