sea salt Peanut Butter Cups

Y’all — peanut butter cups are universally loved and this recipe is fast, delicious and just so easy. It’s everything you’d want in a recipe. Sprinkle some sea salt on top of these and you’ll be lucky if you have any leftovers.

INGREDIENTS

  • 20oz semisweet chocolate chips

  • 1 cup of creamy natural peanut butter

  • ¼ cup powdered sugar

  • ¼ cup light brown sugar

  • 2 tbsp melted butter

  • Sea salt for topping

  • Mini cupcake liners

INSTRUCTIONS

You ready? Good. This will only take a few minutes.

Place 24 mini cupcake liners on a baking sheet or large tray. Melt half of the chocolate chips on the stovetop or by putting them in a microwave-safe bowl for 30 seconds at a time, followed by stirring well. Be sure you stir between each 30 second interval. It shouldn’t take more than a minute and a half to melt completely. Be careful getting the bowl out of the microwave – it can get very hot!

Distribute the melted chocolate into each of the cupcake liners, only filling about 1/4th of the way to the top. Once you’ve filled all of the cups, put the tray in the freezer and let them harden for about 10 minutes.

While you wait, combine the peanut butter, powdered sugar, brown sugar, and melted butter into a stand mixer and mix together on medium until combined. Taste it. It’s so good.

Take the chocolate-filled mini cups out of the freezer and scoop a teaspoon of peanut butter into each cup. If you prefer, you can put the mixture into a piping bag and pipe it into each of the cups. I used this approach because I found it to be a quicker, easier, and cleaner way to get the job done. Either way works – just get that peanut butter on top of the chocolate. Place your tray back in the freezer while you complete the next step.

Melt the last half of the chocolate using the same bowl as before because you are resourceful and brilliant. Take the tray out of the freezer and cover the peanut butter layer in each cup with a top layer of chocolate. Sprinkle a little sea salt on top and voila! Set the top layer by putting it back in the freezer for 10 minutes.

When you’re ready to eat, place the peanut butter cups either in the fridge or on the counter for a few minutes to soften up a bit and then dive right in! Enjoy!
