Ginger Peach Galette

Summertime in Georgia is equal parts scorching heat, cicada songs, grilling out under white lights, lying on the hood of a car looking at the stars, daisy dukes, and peaches. So many peaches. I'll admit, when I moved to Georgia I was on the fence about peaches. But the more summers I spend here, the more I find myself longing for the perfect peach recipe to share with my people. This recipe is just what I need. Not only does it say southern hospitality, but it also touts some French sophistication.

INGREDIENTS

Crust:

  • 1 ¼ cup all purpose flour

  • 2 tsp sugar

  • ½ tsp salt

  • ¾ stick of unsalted butter, cut into small cubes

  • 5 tbsp cold water

Filling:

  • 3-4 ripe peaches, peeled and sliced

  • 2 tbsp sugar

  • 2 tbsp brown sugar

  • 2 tbsp flour

  • ½ tsp ground ginger

  • 1 tsp vanilla extract

  • 1 tsp almond extract

Egg wash:

  • 1 egg

INSTRUCTIONS

Crust:

Add the flour, sugar, and salt into a large mixing bowl and mix well. Cut the butter into small cubes and add to the mix.

Get ready to get your hands messy because I’ve found the best way to mix the butter into the flour mix is to use my hands. Mash it all together a bit and add in the cold water. At this point, your hands are messy, but the dough is coming together so nicely. Messy hands, full heart.

On a clean, lightly floured surface, kneed the dough a bit until uniform and form into a disc shape. Cover with plastic wrap and put into the refrigerator while you do the next step.

 

Filling:

Preheat the oven to 425 degrees and cover a cookie sheet with parchment paper. Put the sliced peaches in a mixing bowl and add in the sugar, brown sugar, flour, ginger, and vanilla and almond extracts. Toss the peaches in the mixture until covered.

 

Assembly:

Take the dough out of the refrigerator and lightly flour a clean surface. Roll out the dough to about a 12” diameter and place on the parchment paper on the cookie sheet. Add the peach filling and arrange into a spiral (or whatever kind of pattern you want – get creative!). Leave about 2” from the edges. Fold over the edges of the dough over the filling.

Whisk an egg together in a small bowl and brush the egg wash over the crust.

Now you’re ready to bake. Bake at 425 degrees for about 17-20 minutes or until the crust is golden. Remove from the oven, let cool, and slice like a pizza.
