Blueberry Basil Bites

Ever wanted something easy, pretty, and super delicious to bring to family gatherings or meals with friends? This is it. They’re so gorgeous.

INGREDIENTS

  • 1 package of cream cheese

  • 1 tbsp vanilla extract

  • ½ cup sugar

  • 1 tub of whipped cream

  • 3 tbsp all purpose flour

  • A few fresh basil leaves

  • Blueberries

  • Mini fillo shells (package of 15-20)

INSTRUCTIONS

In the bowl of a stand mixer, add cream cheese, vanilla extract, and sugar. Whip on medium speed until combined. Add the whipped cream and mix until uniform, followed by the flour. Mix on high for 2-3 minutes until smooth.

Now, line up the mini fillo shells on a plate or a sheet of parchment paper if you’d rather transfer them to another plate later. Spoon the filling into an icing piping bag. If you’d rather spoon the filling into the shells, that works too, I just prefer a piping bag.

A quick tip here – if you put the empty piping bag into a drinking glass and fold the edges of the bag over the lip of the glass, it’s easy to scoop in the filling!

Pipe/Spoon the filling into the fillo shells, top with a couple blueberries, and sprinkle the basil on top.

These can be enjoyed right away or put in the refrigerator to be enjoyed for the next day or two.
