avocado salsa and mexican street corn dip
These two party dips are a duo straight from heaven. I’ve yet to meet a person who doesn’t love Mexican Street Corn and the Avocado Salsa is just the perfect combination of salsa and guac.
INGREDIENTS
Avocado Salsa
5 avocados
7 Roma tomatoes
1/2 red onion
1/2 jalapeno
1 tsp minced garlic
1/2 cup corn
1/4 bunch of cilantro
Lime juice
Salt and pepper to taste
Mexican Street Corn Dip
2 cups of sweet corn
1/2 red onion
1/2 jalapeno
1/4 bunch of cilantro
1 tsp minced garlic
3oz crumbled feta
1/3 cup sour cream
1/4 cup mayo
1/4 cup lime juice
Salt and pepper to taste
INSTRUCTIONS
For the Avocado Salsa, chop up all ingredients, saving the avocado for last, since it’s most likely to brown quickly. Once all ingredients are chopped, pour into a serving bowl, add lime juice, and salt and pepper to taste! Serve with chips!
For the Mexican Street Corn dip, chop up the onion, jalapeno, and cilantro. In a separate bowl, whisk together the sour cream, mayo, and lime juice. In a serving bowl, add all other ingredients and stir. Mix in the ingredients you whisked in the small bowl, stir, add salt and pepper to taste, and enjoy with chips!
